I understand we can make Data Models, But it would be nice to be able to make a table object independent of the whole model and make notes for it etc.

Thanks for writing in Cris. We may add stand-alone tables - for now you're best bet might be to just create a simple ERD with one table. Then you can position any other canvas elements around it!
